Beetroot Brownie by Living Larder

250g of beetroot (2-3 beetroots), cooked and peeled – I just roast whole with the skin on when I already have the oven on for something else.  You could also boil them whole, with the skin on for 20 minutes. 200g of butter – you could also use coconut oil to reduce the saturated fat 250g of dark chocolate 3 eggs tsp of vanilla extract 150g of caster sugar 50g cocoa powder 50g of rice flour – I think you could use regular plain or wholemeal flour here 1 tsp of baking powder 100g of ground almonds

  • Preheat your oven to 180oc/gas 4, line a tin with baking parchment – I use a square casserole dish;

  • Place a heatproof bowl over a saucepan of simmering water – melt the chocolate and butter;

  • Puree the cooked beetroot in a food processor (I think you could also grate the beetroot for a chunkier more beetrooty brownie), add the eggs one at a time, followed by the vanilla and sugar process until smooth, finally add the melted chocolate – no need to process this stage;

  • Sift the cocoa powder, baking powder and rice flour into a bowl, add the almonds.  Stir in the beetroot/chocolate mixture.  Fold to combine all the ingredients;

  • Pour into your prepared tin and bake for 30-35 minutes until just firm to touch – don’t overcook as they’ll dry out.  Leave to cool in the tin and then cut into squares.
